Lemon Caper Chicken


This recipe has become a staple in the Waite household! This is SUCH an easy recipe! The best part is that you can make it ahead of time if need to, and it only takes about 30 minutes to make. Your family or guests won't know that you didn't spend all day cooking this delicious meal up! We love to serve it with our Goat Cheese Cauliflower mash. It all sounds super fancy, but it's all so simple and quick to make. And the lemon butter sauce can be put on the bumper of a car, and I would eat it. It is that good. This recipe isn't technically a Keto recipe, but it's perfectly Keto in terms of the ingredients it has. It can definitely be enjoyed regularly on the Keto diet since it is very low carb and higher in healthy fat. The key to this recipe and really all recipes that contain proteins is to make sure that you buy the best quality of meat you can possibly get. Many people say that it's expensive to eat organic or a healthier diet. I'd like to challenge people and tell them that it is what you make it. If you invest in higher quality ingredients, then you can find other areas to save. I love talking budgeting and making meals on a dime, but I won't get too nerdy in this post. On to the recipe! :)

 

Ingredients:

1 Pound of Pastured Organic Chicken Breasts- We use the butcher box brand

1-2 Tbsp Organic Coconut Oil or Organic Avocado Oil for Cooking

Salt and pepper to season

For Sauce:

4 Tablespoons of Grass Fed Butter (We like Kerrigold Brand)

Juice of 2 Organic Lemons

⅛ - ¼ tsp of Sea Salt (depending on your taste)- This is for the sauce

3 Tablespoons of Organic Capers

3 Tablespoons of White Wine Vinegar

2 Tsp of arrowroot powder- We get ours HERE

2 tsp of water

Directions:

  1. Heat a pan to medium high heat. Add Coconut Oil to pan. While pan heats, season chicken with salt and pepper. Cook chicken for 5-10 minutes of each side until browned. It doesn’t have to be fully cooked for this step.

  2. Remove chicken from pan and add all the sauce ingredients to pan except water and arrowroot powder.

  3. Once all of the ingredients are combined in the pan, in a separate container, mix arrowroot powder and water to create a slurry.

  4. Add arrowroot mixture to sauce to thicken. Once thickened, add chicken back to sauce. Cook for 10-15 more minutes. I suggest to cut the chicken in strips and then add it to your sauce. It seems to be more moist and the flavor of the sauce is in every bite! :)

  5. After sauce is thickened and chicken is fully cooked……..ENJOY! :
